Meal Description

Beef Stroganoff, Stroganov, is a traditional Russian dish made from sautéed beef mixed with Sour Cream.  Since we consider Sour Cream “Fake News,” we will be substituting Crème Fraîche for a more subtle and refined sour taste (a culture of buttermilk and cream, versus lemon juice (acid) and cream...and yes, our Crème Fraîche is made from scratch!).  The dish was named after Russian Diplomat Alexander Stroganov. According to Fox News, the dish was first served in 1871 with the inclusion of mustard, but without onions or mushrooms, and with only a small amount of sour cream.  CNN, however, contradicts this account claiming the recipe first appeared in 1990 with both onions and mushrooms, and served over crisp potato straws….and even goes so far as to claim that mustard is optional….Alright, so our point is that there are many different version of this dish in existence today.  Ours is special due to the inclusion of both the Sous Vide Short Rib and the Black Conica Morel Mushrooms.

 

Black Conica Morel Mushrooms come from the Pacific Northwest and just came into seasons.  These beefy mushrooms have a complex flavor, both smoky and nutty sweet, finished with a musky aroma reminiscent of wet forest leaves.  These mushrooms provide an intense flavor for the traditional mushroom and cream “Stroganoff” sauce. 

 

As always with our homemade pasta, we are using imported Doppio Zero, or “00” Italian flour, which is finely ground and powdery, yielding a light and porous dough. The Italians categorize flour based on a scale of 2 for coarsely ground to “00” for fine. 00 is from the central part of the grain and is pure white, while with Type 2 contains the husk, the outer layer of the grain, and is darker and coarser. Double Zero flour is unique and distinctive from finely ground pastry flour found in the U.S., as the gluten behaves differently by producing both a strong and elastic noodle. It is this elasticity that provides for a superior chew and “mouth feel.”

 

Vegetarian Option:  We will provide a pasta option without the Sous Vide Short Rib. You may notice the price is the same, however the vegetarian option includes more morel mushrooms (which cost 3x as much as short rib!)
