For this creamy risotto, we will be providing a medley of mushrooms highlighted by Wild Chanterelle Mushrooms. Apricot colored and trumpet shape, these mushrooms grow wild in the Pacific Northwest and have a fruity-nutty flavor and a meaty texture. The base of flavor for this dish will come from dried porcini mushrooms, which will add a depth of mushroom flavor. The dish is finished with a few Black Truffles and loads of Parmigiano Reggiano. The meal kit comes with traditional Arborio rice, which has a high starch content with lends itself to cooking on the stovetop and provides the much desired creaminess. While the Mushroom Risotto is a hearty meal, we also will be offering Black Pudding (Blood Sausage) as an add-on for those carnivores among us.
