Meal Description

Vol-au-Vent is a classic French dish generally credited to the Chef of Kings,  Antonin Carême, the chef of Louis XV!.  Auguste Escoffier in his “Cookbook and the Guide to the Fine Art of Cookery” has several different Vol-au-Vent recipes, including de Cervelle (of Brains), de Pigeonneaux (of Pigeons), and de Ris de Veau (of Sweetbreads).  Well, ours is just chicken and pickled beef tongue (which is optional!).

Vol-au-Vent, which is a really refined version of the Panera Bread Bowl, uses puff pastry to hold the filling.  This pastry will be filled with chicken breast and button mushrooms along with a Sauce Allemande. Sauce Allemande is a Velouté sauce (stock and roux) further enriched with egg yolks.  We also will be including English Peas. Lasly, the dish is garnish with pickled beef tongue (optional), which will be cooked Sous Vide and then pickled in vinegar and spices for several days.
