Popular in the rural coal towns of Appalachia in West Virginia as the landlocked mountains lend itself to the meat of the entire animal. Liver is prized for being one of the only offal cuts of meat that can be prepared quickly, while others such as tongue, kidneys, and tripe must stew for many hours. Here, we pair the strong earthy flavor of the liver with the sweetness of the figs. The traditional accompaniment are mashed potatoes to which we will include fava beans (how can we not?!!).
