Meal Description

Translated to “Pepper Steak,” this is the simple French preparation of using freshly cracked peppercorns to form a crust on the outside of the steak.  We are substituting Strip Steak for the traditional Tenderloin and use Cognac as the foundation for the cream pan sauce.  We also are substituting Celeriac Mashed potatoes for the traditional Frites, given that root vegetables are in season.  Lastly, the steak is served with roasted brussels sprouts.  

Tellicherry peppercorns come from Tellicherry, India, and are considered one of the finest peppercorns in the world.  These peppercorns are renowned for their superior bouquet and a rich and bold flavor, which makes them a perfect compliment for the beef.    

We also are offering a Subarashii Kudamono Asian Pears, Endive, and Caramelized Pecan Salad with Cabriflore Goat Cheese & a Cinnamon Walnut Oil Vinaigrette.  Subarashii Kudamono Asian Pears are grown on a sustainable farm in Eastern Pennsylvania and just came into season.
