Meal Description

We are bringing back our Amish-Raised Free Range Chicken for this taste of Morocco.  The Chicken will be roasted in a Dutch oven to simulate the Tagine used in Moroccan cooking (the pot with the cone shaped lid).   The Beldi Olives and the Preserved Lemons gives this dish a unique flavor profile distinct to North African cuisine.  The side dishes will include Zaalouk (roasted eggplant), and Moroccan Couscous. 

Cook de Cuisine’s Chairman had a Moroccan nanny for over 9 years.  And, at some point, she started cooking for the family.  Even though she watched the food network constantly, she would only cook Moroccan food.  When asked why she never cooked anything else, she would say, “Why not?  Because I like my food!”  She was an amazing cook.  These are her recipes.
