Poulet Grand-Mère Marguerite, or
grandmother’s roast chicken, is a classic French fricassee (which simply means
a cut up chicken). My grandmothers were both named Marguerite, and one lived in France for many years, and made a wonderful roasted chicken. Any French dish
termed “Grand-mere” has the same four ingredients, including lardons (bacon!),
pearl onions, sautéed mushrooms, and roasted potatoes. We have sourced an
Amish free-range chicken farmed locally in the Pennsylvania Dutch countryside that is 100%
vegetarian grain fed, hormone and antibiotic free, and Halal slaughtered. These birds have glistening white skin and
delicate meat and have won Bon Appetit’s Best Tasting Chicken Award. Don’t worry, it gets better, these Penobscot/Cobb
cross breeds come with the feet attached, which are rich in collagen and will
turn to gelatin to provide a richly flavored sauce with a wonderful silky mouthfeel.
