We are offering our take on traditional Chicken & Dumplings. The key to this dish is the chicken broth, which is the basis for this soup. We will be making the broth from scratch, and while Swanson’s Chicken Broth is convenient, there simply is no comparison.
We will be including locally sourced Amish-Raised Free Range Chicken. We will provide the traditional vegetables of leeks, carrots, and celery along with seasonal summer vegetables.
The Dumplings will have the texture more of a Gnocchi, rather than the traditional biscuit dough, and are flavored slightly with Dijon Mustard and Chives. We will be using imported Doppio Zero, or “00” Italian flour, which we use for all of our pastas and dumplings. The flour is finely ground and powdery, yielding a light and porous dumpling, providing for a more enjoyable “mouth feel.”
