The Staff Meal, which is referred to as the “Family Meal,” is served to both the front and back of house just prior to both dinner and lunch service. Its formality varies greatly depending on the restaurant, but its logistical importance increases exponentially the larger the brigade...imagine having to serve 70 people at once. As a result, Staff Meals are typically served family style with menu selections that are comforting and hearty. This Honey & Soy Glazed Chicken recipe comes from a restaurant in Austin Texas.
This meal is simple and straightforward which is why it lends itself so well to a staff meal. The chicken is cooked in Soy & Honey and an Asian Mirepoix (garlic, ginger, scallions) until it reduces to a glaze. Long Grain rice is fried with bacon (optional) soy, egg and scallions.
As for the Kimchee, we will make that as it takes several days for the cabbage to ferment. Kimchee is essentially Korean Sauerkraut with chili flakes…...or said another way, Sauerkraut is German Kimchee without the chili flakes. We can substitute a simple side salad upon request.
