This is a classic Italian Risotto using the traditional Arborio rice. The rice is short grained and has a high starch content with lends itself to cooking on the stovetop and provides the much desired creaminess. We are offering both a Butternut Squash Risotto with Toasted Walnuts and a Parmesan Risotto, both of which will use a combination of vegetable broth (made by roasting 13 different vegetables) and Parmesan water. The Parmesan Risotto will have Parmesan Cream as well. The Risottos are garnished with Sage. We also will have Shrimp available as an add-on.
We also will be offering a Warm Castelfranco Chicory Salad with Vincotto and Blu di Bufala. Castelfranco is an Italian radicchio variety with delicate leaves that are pale yellow with red-pink flecks with a slight bitterness and a buttery texture. Vincotto is aged Italian Vinegar. Blu di Bufala is an intense Aged Blue Cheese made from Buffalo milk in the Lombardy Region of Italy based on an ancient recipe.
