Description

If you like bourbon, and you like ribs, you are going to love these.  Alcohol’s boiling point is 173.1 degrees, lower than water, and almost always evaporates when added as an ingredient.  We will be cooking the ribs for 12-hours at 180 degrees, but since we will be cooking the ribs Sous Vide, or under vacuum, the alcohol will not evaporate.  Instead, the bourbon remains and penetrates the ribs to infuse an intense bourbon flavor.  We also will make a scratch-made bourbon BBQ sauce from the Jus of the ribs - ours is East Carolina, or vinegar-based. 


What is Berkshire pork?  Berkshire pigs are a rare breed of pig originating from the English county of Berkshire over 400 years ago.  Legend has it that Oliver Cromwell’s army discovered the breed while in winter quarters. This black-coated hog with white areas on the face, legs and tail, is known for its juicy, tender, and flavorful meat.  These animals are raised on small farms free to forage throughout the pastures. These animals are raised without antibiotics or growth hormones.  


The meal kit comes with a smoked Gouda Mac N’ Cheese, stewed okra, and cheesy grits cornbread (Cook de Cuisine's Chairman does not like cheese in her cornbread as she likes it with honey. Feel free not to add the cheese, if desired).  We also have a southern watermelon salad with mâche and toasted pecans.  Kid’s meals also are available without any seasoning and served with cheddar for the Mac N’ Cheese.
