This is a rich, full of flavor, hearty meal based on the traditional French Cassoulet recipe. Since Duck Confit takes 24-hours to make, we will cure the duck legs overnight and cook Sous Vide for 8-hours at 180 degrees, so the dish can be prepared in about an hour.  Plus, the Sous Vide Duck Confit results in robust flavored, tender meat.  We also are including Haricot Tarbais in this dish, making it truly authentic.  These beans are said to have been brought back to Europe by Christopher Columbus and only grow in Tarbes at the base of the Pyrenees in Southwestern France.  These handpicked beans have a luscious, creamy center and simply can’t be substituted.  Haricot Tarbais retail for $20 per pound and are not readily available in grocery stores. 

This meal kit serves 4 and will take about a 1-1.5 hours to cook (only 20 min. of active cooking).  We hope you enjoy this truly authentic French Cassoulet.
