Meal Description
Cuban - A Cuban sandwich is a variation of a ham and cheese sandwich that originated in cafes catering to Cuban workers in Key West. The sandwich is made with ham, roasted pork, Swiss cheese, pickles, mustard, and salami on Cuban bread.
The dish contains slow roasted pork shoulder, and was traditionally the meat left over from whole hog roasts. We will Sous Vide a pork shoulder overnight for these sandwiches. While these are traditionally pressed in a special grill, a heavy pot placed on top of a skillet works just fine.
Muffaletta - This sandwich was the creation of a Sicilian immigrant Salvatore Lupon who first put olive salad on cold cuts on a round loaf of bread at the Central Grocery on Decatur Street in New Orleans The signature olive salad consists of olives diced with pickled celery, cauliflower, and carrots, and oregano and garlic, and allowed to combine for at least 24 hours. The traditional bread used is a large round italian loaf, which is cut into 6 slices.
Each sandwich will come with a garden salsad.
