Sustainably raised in the North Sea off the Coast of Scotland, this is one of the most flavorful Salmon we have ever had. The cold, deep, and highly oxygenated waters of the North Atlantic produce a bold and distinct flavor profile with meat that is tender and succulent. This dish is wonderful in its simplicity, served with a preserved lemon relish. Roasted celeriac, squash, along with sauteed Broccoli Di Rabe, add some color to the plate.
Broccoli Di Rabe, also known as rapini, originated in Puglia in Southern Italy and has become ubiquitous on American menus. Related to both the cabbage and turnip families, this green is bitter with a deep, green pungent taste.
