The embodiment of Germanic cuisine, Schweinshaxe is the quintessential meal throughout Bavarian Beer Halls. The name translates to Ham Hock, which is the shank of the animal located between the elbow and the ankle. The shank is a rich and hearty, with the tender succulent meat surrounded by crispy skin. It is this high proportion of meat to crispy skin that makes this dish so satisfying. The meat is high in connective tissue (as does any muscle that gets a lot of use), which requires a lengthy cooking time to turn it into collagen, but results in tenderful, flavorful meat.
The shanks will be brined overnight in apple cider and traditional german spices. We will then cook the shanks Sous Vide for 12-hours. The fully-cooked Shank will be roasted in a 450 degree oven to crisp the skin prior to serving. The Schweinshaxe comes with a choice of two different sides.
