Aji Amarillo is the staple ingredient in Peruvian Cooking, which translates to “Yellow Pepper.”  Native to South America, it is a medium heat chili from the Capsicum baccatum  family and not widely available in the U.S.  The chili has a wonderful yellow color that provides vibrance for the sauce.  It's ubiquitous in Peruvian cuisine, working its way into soups and sauces, which are used in pretty much everything.  The Aji Amarillo Sauce is made using ground walnuts and milk in addition to the peppers, similar to its distant cousin the Romesco Sauce from Spain which uses Almonds.

Traditionally, Aji de Gallina is served with rice and potato (double starch!) and garnished with a hard boiled egg and black olives.  We are leaving out the potato, and adding Spinach, because our mother always told us to eat our vegetables...Peruvians please don’t think any less of us…the spinach will be served with Salsa Criolla, a pickled onion condiment popular in Peru.   


Peruvian Quinoa Salad.  Legend has it that, long before all the hip, suburban health nuts started eating this comma-shaped seed, the Aymara people of the Andes were given the gift of quinoa.  A farmer discovered potatoes had been dug up and eaten, so he hid to find the culprit.  Soon, glaring stars of light came down around the field.  These were the Maidens, or “Star Sisters.”  He rang his bell to scare them off, and all did, except the youngest who hesitated but only for a second and then flew back to the heavens. The farmer, so enamoured, climbed a mountain and found a Condor (world’s largest flying bird) and flew to the heavens where the two fell in love.  The farmer was then fed quinoa by his new love, the food of the god’s and the symbol of love.  Yearning to see his family once again, the farmer flew down on his Condor with a bag of Quinoa for his people, spreading it across the Andes as he flew.  How romantic!  The salad will come with Quinoa, an extra serving of Romance, and Cucumbers, tomatoes, bell peppers, shallots & Queso Fresco….with a Lime-Aji Amarillo Vinaigrette.
