Spanish cooking is simple. This dish consists of Garlic, Onions, Tomatoes, Fennel, Potatoes, Piquillo Peppers, Pimentón, and Sous Vide Short Rib….that’s it. However, the key is in the preparation. The base of this stew is a sofrito, which is the Catelon preparation of onions and tomatoes. We will caramelize the onions and roast the tomatoes to intensify their flavors, and then cook them combined for several hours. Pimentón, or sweet paprika, gives the dish a distinctly Spanish flavor. Lastly, Piquillo Peppers, whose name means “little beak” due to their shape and are ubiquitous in the Northern Basque region, are added to provide a sweet, roasted flavor.
The salad add-on is Espinacas a la Catalana, a Spinach Salad with Garbanzos, Pine Nuts, Garlic, Golden Raisins with a Sherry Vinaigrette. The salad can be served hot or cold.
