If you like bourbon, and you will like these ribs. Alcohol’s boiling point is 173.1 degrees, lower than water, and always evaporates when added as an ingredient. We will be cooking the ribs for 12-hours at 180 degrees, but since we will Sous Vide, or vacuum seal the ribs, the alcohol will not be allowed to escape. Instead, the bourbon remains and penetrates the ribs to create a robust bourbon flavor. We also will make a scratch-made bourbon BBQ sauce from the Jus of the ribs - ours is West Carolina, or tomato-based, as opposed to East, which is vinegar-based.
What is Berkshire pork? Berkshire pigs are a rare breed of pig originating from the English county of Berkshire over 400 years ago. Legend has it that Oliver Cromwell’s army discovered the breed while in winter quarters. This black-coated hog with white areas on the face, legs and tail, is known for its juicy, tender, and flavorful meat. These animals are raised on small farms free to forage throughout the pastures. These animals are raised without antibiotics or growth hormones.
The Smoked Gouda Mac N’ Cheese is made the traditional way with a Mornay Sauce, which is a derivative of the Béchamel sauce, one of the 5 “Mother Sauces” in French cuisine. The result is a luscious and creamy Mac N’ Cheese….simple and delicious.
