We will be making our Hand Made Pappardelle pasta and will provide a choice of the following:
1- Mozzarella Stuffed Meatballs - The meatballs will be made with a combination of Grass Fed Ground Beef, Ground Pork (optional), and Ground Veal and will be stuffed with fresh Mozzarella. The Marinara sauce is made from roasted tomatoes.
2- Shrimp Scampi - Scampi means Shrimp in Italian, so we are essentially calling this dish Shrimp Shrimp. This dish is made by sauteing shrimp in garlic and unfiltered olive oil.
3- Carbonara (Guanciale, Duck Egg, Cheese)- This dish consists of Guanciale, which is cured pork jowl, and uses a Duck egg for the sauce.
4- Alfredo (Butter & Cheese)- Legend has it that in 1914 Alfredo di Lelio was trying to cook something that would please his wife. He created a sauce made from parmesan cheese and butter and poured it over some fettuccine and that was it. The use of heavy cream, which we omit, is an Americanized version of the classic Italian dish.
5- Aglio Et Olio (Garlic & Olive Oil) - This is the simple preparation of pasta with Garlic and Olive Oil. Eat your pasta just like they do in Rome!
We are using imported Doppio Zero, or "00" Italian flour, which is finely ground and powdery, yielding a light and porous dough. The Italians categorize flour based on a scale of 2 for coarsely ground to “00” for fine. 00 is from the central part of the grain and is pure white, while with Type 2 contains the husk, the outer layer of the grain, and is darker and coarser. Double Zero flour is unique and distinctive from finely ground pastry flour found in the U.S., as the gluten behaves differently by producing both a strong and elastic noodle. It is this elasticity that provides for a superior chew and “mouth feel.”
The fresh pasta will only take one minute to cook in a pot of heavily salted water, which should taste like the sea. The pasta water will then be used in each of the preparations to form the base for the sauce.
We also will be offering a Warm Castelfranco Chicory Salad with Vincotto and Blu di Bufala. Castelfranco is an Italian radicchio variety with delicate leaves that are pale yellow with red-pink flecks with a slight bitterness and a buttery texture. Vincotto is made from wine Must, which is the first press of the grape that still contains the skins, seeds, and stems of the fruit. Blu di Bufala is an intense Aged Blue Cheese made from Buffalo milk in the Lombardy Region of Italy based on an ancient recipe.
