Spanish cooking is simple. This dish consists of Garlic, Onions, Tomatoes, Piquillo Peppers, Pimentón, and Squid….that’s it. However, the key is in the preparation. The base of this stew is a sofrito, which is the Catelon preparation of onions and tomatoes. We will caramelize the onions and roast the tomatoes to intensify their flavors, and then cook them combined for several hours. Pimentón, sweet paprika, gives the dish a distinctly Spanish flavor. Lastly, Piquillo Peppers, whose name means “little beak” due to their shape and are ubiquitous in the Northern Basque region, are added to provide a sweet, roasted flavor. The squid is added last just before serving, along with a splash of cream (optional). The stew will be served with a Catalonian flatbread, using puff pastry for the dough, topped with caramelized onions, piquillo peppers and manchego cheese.
We also will be offering a Fig Salad with Cabrales Cheese and Marcona Almonds. The salad highlights three popular Spanish ingredients: Figs, which are currently in season; Cabrales cheese, an intensely flavored blue cheese from Asturias, Spain, with the cow’s milk coming exclusively from the herds raised in that region; and, Marcona Almonds, these flat nuts have gained in popularity in the U.S. in recent years, growing along the Mediterranean on the Coast, have a characteristic sweet, delicate taste.
On her first trip to Spain, CookDC’s Chairman discovered her love for Spanish seafood. This is her favorite dish after Calamare En Su Tinta, which is squid cooked in its own ink….we thought that would be a little aggressive to offer.
