Why pheasant? Well, just because everyone else always uses chicken. Pheasant is a game bird and is leaner than farm raised poultry, but has a wonderfully distinct and delicious flavor. We will carve up the Pheasants and Sous Vide the meat, while reserving the carcass for the stock. The veggies, including a Mirepoix, Roasted Corn, Parsley Root, Jerusalem Artichokes, among many other seasonal goodies that we may add if they look appetizing. It will take 5-10 min. to make the Béchamel sauce, and then all the ingredients will be baked in the oven under a sheet of puff pastry. C’est Voila, Pheasant Pot Pie in about 30 minutes.
