The star of this dish is the Milk-Fed and Grass-Finished Rack of Lamb, which we had the opportunity to taste at one of our food conferences. The lamb will be minimally seasoned allowing its flavor to stand on its own. The Israeli Couscous, which we prefer given its larger size, will be served with scallions and topped with toasted pistachios. Lastly, we will Sous Vide the baby carrots, which will then be reduced in their own sugars to create the glaze. A classic Cucumber, Tomato, & Feta salad is available as an add-on.
Cuisine’s Chairman will not eat lamb without mint jelly. So, if you are like the chairman, please let
us know to include some at checkout.
