We will be hand rolling the pasta the morning of delivery and will offer a choice of hand cut Pappardelle (wide and thick) or Linguini from a press (thin and uniform). We are using imported Doppio Zero, or "00" Italian flour, which is finely ground and powdery, yielding a light and porous dough. The Italians categorize flour based on a scale of "2" for coarsely ground to “00” for fine. 00 is from the central part of the grain and is pure white, while 2 contains the husk, the outer layer of the grain, and is darker and coarser. Double Zero flour is unique and distinctive from finely ground pastry flour found in the U.S., as the gluten behaves differently by producing both a strong and elastic noodle. It is this elasticity that provides for a superior chew and “mouth feel.” The fresh pasta will only take one minute to cook in a pot of heavily salted water, which should taste like the sea. The pasta will then go into the pan with mushrooms and truffle sauce with a splash of pasta water.
Black Burgundy Truffles are
in their peak season, so we thought we would take advantage. Black on the outside and white on the inside, Burgundy truffles
are stronger flavored than summer black truffles. Their gentle flavor has a slight muskiness with hints of
coconut, walnuts and white wine. The
truffles will be infused in the cream overnight. The dish is highlighted with lavender and garnished with watercress,
pecorino, and shavings of truffles.
CoodDC’s Chairman once
attended a weekend-long wedding reception (like the one's they make movies out of) at a world famous destination restaurant
and Inn, whose signature “snack” was popcorn topped with
Summer Black Truffles. By day 3, the
Chairman began to experience “Truffle Fatigue,” which luckily proved a temporary
affliction, as her love for the tuber has since returned.
