Costata Brasata Alla Romana, or Roman Braised Short Rib, is characteristically simplistic as are all Italian recipes. The indigents include aromatics, red wine, veal stock and San Marzano tomatoes, along with the short rib. Here, we will cook the short rib Sous Vide, which will simply be reheated in the sauce. The braised short rib will be served over a creamy polenta, a classic combination, as the gravy will in turn flavor the polenta. We will be including imported Italian Puntarella, which is a chicory that is currently in peak season.
Lastly, the Short
Ribs will be garnished with a Gremolata. A Gremolata is a combination of
garlic, lemon juice, lemon zest, and parsley and is traditionally used with
braises to provide a balance of fresh flavors to offset the braise which cooks
over a long period of time.
