We are sourcing Duroc pork for this dish, which is a heritage bread.  Bright pink in color, Duroc rib chops are higher quality due to its PH factor resulting in a richer hue, firmer texture, and increased tenderness than standard commercially raised pork.  It is for these reasons that the breed is often referred to as the “Black Angus” of pork.

The pork chops will come brined, meaning in a salt solution with aromatics to both flavor the meat and to keep it moist.  The pork is to be grilled, but can be broiled or pan roasted. Cherries have just come into season and will be used to create a pan sauce.  The Potatoes will be mashed with garlic confit.

Also in peak season, wild mustards have longer stems than cultivated mustard greens with thicker and more irregular leaves.  Mustard, from the brassica family which includes kale, broccoli, and cauliflower, has a spicy flavor with a hint of bitterness.
