We believe food is more than simply nourishment. Food is memory. A taste, texture, or smell can all elicit happy memories, memories of perseverance, memories of tragedy. Whether it is the Grape Nehi and bag of Funyuns bought every time the visiting hours ended, the texture of your grandmother’s yellow cake with chocolate frosting, the half gallon of strawberry sorbet that sweetened the fruit punch at the annual Christmas party….taste and smells can remind us of all kinds of memories about people and events.
Our “Memory Food” is the hamburger. Yes, the humble hamburger. It reminds us of someone who left home at the age of 17, never to return. He paid his way through college by working nights as the bartender at Cecil’s...even though students were not allowed off campus. The drink of choice in that backwater area of Virginia was a Red Eye….a beer with tomato juice and an egg...and he was happy to oblige. And, believe it or not, it is actually tastier than it sounds.
Like his father, he became an accountant and then went on to a law school. Since he had to pay his way, night school was the only option. After a full day of work and before evening classes, he would stop by Mo’s Diner every night for a Hamburger. He worked his way through college and law school with unbridled ambition, nourished by the proletarian hamburger.
Years later, he became a great success in his chosen discipline of business and law. Nightly dining at restaurants so expensive that only a corporate account could afford. Wagyu, Grass Fed, Free-Range...all terms not used during the 1980s, but nonetheless their expensive equivalent existed. But, away from all that, when asked what he really wanted to eat...and never with a hesitation….it was always a good burger…after his first bite, he would say, ”It doesn’t get any better than that.” Never forget where you come from or who you are. This is his burger.
Our custom grind blend that consists mostly of Short Rib and Ribeye, with a lesser portion of Hanger steak. We will grind the meat twice to ensure thorough mix and a tender burger. The combination of these different cuts, along with the flavor profile coming from grass-fed meat, produces a juicy, one-of-a-kind burger.
We also are providing a variety of options for what to put on the burger. The default meal kit comes “Neat” with aged cheddar, other options include, 1) Charred Jalapeño & Melted Brie, 2) Chorizo & Manchego, or 3) Sous Vide Pork Belly & Blue Cheese. Clearly, there is a little something for everyone.
The sides will include hand cut fries oven roasted with Grass Fed Beef Tallow (fat rendered from the suet), which provides a beefy flavor to the fries. We also will provide a side salad...for digestion.
