We will roast the Chestnuts and make a Mousseline, which is a mix of pureed Chicken Breast, Crème Fraîche and aromatics.  The Chicken must be very cold or else the cream will break out of the mixture. We will then stuff the chicken thighs with the mousseline and cook Sous Vide.  The thighs will be pan fried to crisp the skin and placed in the oven for 10 min to reheat.  

The Chicken will be served with Mashed Celeriac (or Potatoes), Swiss Chard, Glazed Chestnuts and Cranberries.  Lastly, the dish will be completed with a Beurre Monté sauce, which is an emulsified butter sauce made by whisking cold butter into hot water.
