Ah,
rabbit….”The Chicken of the Field!” Rabbit has tender meat, a delicate
flavor, and is a staple in cuisines throughout the world.
Yes, we
realize rabbits are cute….but you need to look past that….because they are
delicious. And for the environmentally conscious among us, rabbits are
vociferous reproducers with a Doe (female rabbit) able to produce 60 offspring
per year....hence the term….”breeding like Rabbits.” And, the Kits (baby
rabbits) are weaned at four weeks allowing the Doe to produce another litter
quickly...we call those “Irish litters.” Furthermore, farm-raised rabbits
typically eat alfalfa instead of the more energy intensive soy meal. The
same amount of water and feed will produce 6 pounds of rabbit meat versus 1
pound for beef. And, it is a healthy alternative, with a third less
calories and half the fat of chicken. So, unless you had a pet rabbit
named Theo growing up which is the reason you still don’t dress your salad just
in case he wants a bite...you should give it a try!
The rabbits legs will come fully cooked Sous Vide having been marinated with herbs and garlic. Pancetta will be rendered to serve as a base (can use butter). We are using Albariño wine for the base of the braising liquid, which is a grape grown in Galicia, North Western Spain. The wine will come reduced and combined with Rabbit stock. The Rabbit goes into the oven for about 20 minutes, or until the meat falls off the bone. The Rabbit will be served on top of Saffron-infused Couscous, which will absorb the flavorful braising liquid.
