We will be cooking a Bone-In Boston Duroc Pork Butt Sous Vide, which provides an unmatched tenderness and flavor for these sandwiches. The pork will already come pulled and only need reheating. We will offer vinegar-only coleslaw for the pulled pork, our Famous Smoked Gouda Mac N' Cheese, along with Mexican Street Corn with a Merquén Aoli.
The Duroc pork has been cooked for 24 hours at 165 degrees Sous Vide. The food write Kenji Lopez-Alt of Serious Eats caused a big kerfuffle when he said this method using liquid smoke was superior to that of an actual pit BBQ…..well, we agree and you can see for yourself. Since it is fully cooked, the pork will go into the oven for about 10 minutes until heated through...if you microwave it, the Sous Vide police will come and confiscate your dinner.
The Radiator noodles will be incorporated with the Mornay sauce, which is a Béchamel sauce containing cheese. This is one of the 5 French Mother Sauces. The Mexican Street corn will be served with the Merquen Aioli (smokey flavored) and cilantro.
