Originating in Austria, a schnitzel is a meat that has been pounded thin, and either coated with flour, egg, and breadcrumbs or left uncoated, and deep or pan fried.
Jägerschnitzel - Known as the “Hunter’s Cutlet,” Jägerschnitzel was originally made with game meats, such as wild boar or reindeer pounded thin and pan fried. Jägerschnitzel includes a creamy mushroom gravy made with sour cream for the Schnitzel.
Wiener Schnitzel - Arguably the most well know Schnitzel, Wiener Schnitzel is a breaded and fried veal cutlet. It is believed that this is the origin of the Southern Chicken Fried Steak, thought to have brought by German immigrants to Texas in the early 19th Century. Other variations include Zigeunerschnitzel, which is served with a bell pepper sauce, and Rahmschnitzel is served with a rich cream sauce.
