A classic frisée salad is bitter, crunchy, and tangy.  The French salad is traditionally made with Bacon Lardons and a poached egg.  Here, we are replacing the lardons with Duck Confit and a Duck egg will be offered as an Add-on.  The Frisée provides the bitterness and texture while the mâche balances with sweetness and lightness.  We are putting a Spanish Flair on this dish with the additional of almonds, olives and piquillo peppers.  Duck Confit takes at least 24 hours to make as the legs are first cured over night before the legs are cooked for 6 hours Sous Vide. The Duck Confit is meant to be served warm and will be reheated in a skillet with shallots.
