Meal Description

It is time to break out the offset spatula and the crêpe pan!....well, ok, a butter knife and a non-stick pan will work just fine.  We are offering several options for savory Galettes de Sarrasin, which are buckwheat pancakes, and several sweet Crêpes de Froment, which are wheat flour pancakes, both hail from Brittany in Northwestern France.  

While a Galette is a term used in French cuisine to designate various types of flat round or crusty cakes, the Breton Galette is a Crêpe with a savory filling, the most common being the Galette Complète with ham, gruyère, and an egg.  Buckwheat flour is not really flour as it comes from the achene seed and contains no gluten.  The flour has a nutty, earthy taste enhancing the savory filling (note: we add wheat flour to the batter to make it manageable).  The Galette Forestière is a traditional vegetarian option filled with wild mushrooms. The offering are as follows:

Galettes de Sarrasin options Include:

Galette Complète - Black Forest ham, Gruyère cheese, Spinach, and a Duck Egg

Galette Forestière - Wild Mushroom Medley, Spinach, & Goat Cheese

Smoked Salmon, Pickled Asparagus, Shallots & Fresh Chive Cream

As for the Crêpes, the word is derived from the latin crispa, meaning "curled," referring to the edges while it cooks.  Crêpes are served with a variety of fillings, from simple butter and sugar to the famous Crêpes Suzette, which is a cognac flambe.  The offerings are as follows:

Crêpes de Froment options include:

Chocolate Ganache

Nutella (Hazelnut) & Banana

Strawberries & Cream

Meyer Lemon Ricotta

Maple Sugar & Syrup

The batter has to sit for a minimum of 2 hours, so it will come already mixed allowing for the starch molecules to absorb the water, which thickens the batter.  And, in the case of the Crêpes, the resting allows the gluten formed during mixing to relax and release the air from the batter.  

And, no worries, we will be providing extra batter for a few burners….the French always use the first one to test the pan, and as the saying goes, “La première, c’est pour le chien!”  The meal also will come with small Breton side salads. Lastly, the Galettes and Crêpe options can be ordered per serving, just let us know in the area specified.
