We will Sous Vide the Milk-Fed and Grass-Finished Rack of Lamb to ensure it is perfectly cooked. The rack only needs to be glazed with the Honey Mustard and reheated in the oven. We will provide a Bechamel Sauce for the Potatoes, which will then be cooked off in the oven to create the Gratin. The Asparagus will be cut into “Coins” using a mandolin and will be sauteed briefly in Chive Oil.
While this meal does Sauce itself, CookDC’s Chairman never eats lamb without mint jelly. So, if you are like the chairman, please let us know to include some at checkout.
We also will be offering as an add-on an Apple-Brussel Sprout Salad with walnuts, Pecorino Romano, and a Honey Vinaigrette as an add-on.
