Kañiwa (pronounced ka-nyi-wa), not to be confused with its closely related cousin, Quinoa, is a seed from the Andes Mountains of Peru. This species of Goosefoot (flowering plant) is grown at extreme elevations where wheat, rye and corn grow unreliably or not at all. It is considered more resistant than any other grain crop to a combination of frost (frost occurs up to nine months of the year in this region), drought, salt, and pests. Sometimes referred to as“baby quinoa” due to its smaller size, kañiwa is higher in protein, fiber, iron, and calcium, with an earthier, nuttier taste and darker color.
Our Kañiwa comes from an association of Peruvian farmers and is USDA certified organic. The Kañiwa will simply replace the salad greens in a normal Greek Salad, and meant to highlight the fresh vegetables currently in season. The salad can be served hot or cold.
