Even though Oktoberfest ended last week, we thought we would keep the party going with this week’s German offerings.
Jägerschnitzel or “Hunter’s Cutlet” was originally made with game meats, such as wild boar or reindeer pounded thin and pan fried. Jägerschnitzel includes a creamy mushroom gravy for the Schnitzel, which is very popular throughout Germany. The Jägerschnitzel will be served with homemade Spätzle, which is a Bavarian egg noodle.
Originating in Austria, a schnitzel is a meat that has been pounded thin, coated with flour, egg, and breadcrumbs, or uncoated, and deep or pan fried. The most popular being Wienerschnitzel, which has to use veal, is a breaded and fried veal cutlet. It is believed that this is the origin of the Southern Chicken Fried Steak, thought to have brought by German immigrants to Texas in the early 19th Century. Other variations include Zigeunerschnitzel, which is served with a bell pepper sauce, and Rahmschnitzel is served with a rich cream sauce.
Spätzle, which translates to “little sparrows” is found throughout Southern Germany, Austria, and Switzerland . Traditionally, Spätzle are made by scraping long, thin strips of dough off a cutting board into boiling salted water to form irregular shapes. We also will be offering a Radi und Radieschen, a Bavarian Radish Salad with a Mustard Dill Vinaigrette.
