Meal Description

A Crab Gratin is a versatile dish that can be enhanced by any number of different ingredient based on the geography.  Here, we are preparing the classil “Jacqueline,” which complements the crab meat with pineapple, which have just come into season.  For the heat, we are replacing the traditional cayenne with harissa for this classic French pairing.  A La Martiniquaise, another classic gratin, replaces the pineapple with ham and includes rum for a taste of the West Indies. 


The ripeness of a pineapple is determined by its level of sweetness. In terms of sweetness, the minimum sweetness for a ripe pineapple is 12 degrees of sugar. Contrary to popular belief, pineapples are a climacteric fruit and do not ripen off the tree or get sweeter after picking.  This contrasts the most common non-climacteric fruits such as banana, avocado and pear.


Now, pineapple, and most fruit in general, are generally picked before maturity to withstand the journey to the grocery store. This is what makes the supplier of tropical fruit important, as the distributor ideally should have the relationship directly with the farms and plantations to ensure the fruits are picked only when ripe.


This is a standard Gratin with jumbo lump blue crab.   A sauce of pineapple, grapefruit, blood orange and harissa will be added to bechamel along with chunks of pineapples.  The Gratin will be quickly be reheated over the broiler and served over long grain rice.
