A Philadelphia Classic ever since one of Pat and Harry Olivieri fried up the first cheesesteak in the 1930s. Later, Pat opened Pat’s King of Steaks, which sits across the street from Geno’s Steaks opened in 1966. Every Philadelphian has an opinions on which is better. Pat’s chops up the Ribeye while it cooks, while Geno’s keeps it whole - you can do whatever you want. And, you can eat it “Wit” or “Wit Out” onions and Cheez Wiz (although it is a must for the Cheesesteak Connoisseur).
Cheez Wiz - A Molecular Gastronomy Pioneer. This iconic liquid form of cheese was developed by Kraft in 1952. It uses emulsifiers and stabilizing agents, such as xanthan gum or carrageenan, to provide for its viscosity, which are two ingredients embraced by the modernist chefs of the last decade to forever alter the fine dining landscape.
We pay homage to this classic sandwich with freshly-shaved Grass-Fed ribeye and sauteed onions. Bell Peppers and Mushrooms are available as add-ons, as are Pickled Sweet Peppers and Pickled Jalapenos. The Cheesesteaks are served with French Fries cooked in suet, which provides for a delicious beefy flavor, and finished with Maldon’s Fleur de Sel. Lastly, the meal comes with a Garden Salad, primarily to aid in digestion, but also for its nutritional value.
