Veal it tender with a delicate but distinct flavor. It is also one of the leanest meats, which lends itself well to grilling over high heat (however is not forgiving if overcooked). The veal is humanly raised and are free-range and “grain-fed,” rather than the more commercial soy- and milk-formula diet.
We will be providing bone-in veal chops, which come from the rib, either grilled “Tuscan” style, or pan fried “Milanese” style, which is breaded (very similar to the German Wiener Schnitzel). For the Tuscan Chop, we will marinate the meat in lemon and herbs and it will simply be topped with herb infused unfiltered Olive Oil. The fat from the olive oil with mix with the meat juice and create a wonderful flavorful sauce. As for the Milanese Chop, these will be pounded thin, coated with an egg wash and then herb-infused breadcrumbs, and quickly pan fried. These chops will be served with a squeeze of lemon and boquerones (white anchovies). These are both simple preparations showcasing the flavor of the veal.
The meal will come with an arugula salad with baby vegetables, including local tomatoes, beets, Baby Pattypan Squash, Baby Romanesco Cauliflower as well as carrots, cornichons and a lemon vinaigrette.
