Italian cuisine is highlighted by its simplicity. The Grass Fed Hanger Steak is seasoned with salt and pepper and coated with olive oil and grilled or broiled (traditionally, the cut is a T-bone and it is cooked over a charcoal flame). It is then served as they do in Florence with a healthy squeeze of lemon, with the tanginess combining with the rich juice from the beef for a fantastic combination.
The Spinaci Alla Romana is spinach sauted in garlic with Golden raisins and toasted Pine Nuts (Alla Fiorentina is creamed spinach). Lately, Cardi Grantinati is a gratin made using Cardoons. A Cardoon looks similar to celery but have a flavor profile of an artichoke. We will trim and parboil the Cardoon, which will be finished in a the oven with a Besciamela Sauce (yes, the Italian word for Bechamel) and topped with breadcrumbs.
