The Pork Shoulder will be cooked Sous Vide to promote tenderness. The key to the flavor of this dish is the slow roasting of the tomatillos.
From the Nightshade Family, that includes potatoes, eggplant, Chilis, and Tomatoes, the Tomatillos is related to, but is not a green tomatoes. Native to Mexico & Guatemala, the Tomatillo was cultivated by both the Mayans and the Aztecs. Tomatillo, when ripe have a papery husk and a slightly sticky water-soluble residue on the outside. In fact, the plant’s species name, Ixocarpa, means “sticky fruit.” These fruits remain green when ripe and have a distinctive tartness that lends itself well to the pork. The Chili Verde will be served with Rice & Tortillas.
