Meal Description
Bistek Tagalog is a regional Filipino dish. Bistek translates to beefsteak and Tagalog referring to the region the dish originated in the southern part of the Philippines. The steak is marinated in soy sauce and calamansi juice. The calamansi is a hybrid citrus fruit created a century ago by combining a mandarin orange with a kumquat, creating a distinct sour taste. Traditionally served with tougher cuts pounded thin, we have opted instead for sirloin that will be cut into strips and pan fried along with the onions and the marinade. We will be adding bell peppers, baby leeks and kale, which also are not traditional, as well as bone marrow to balance the acidity of the sauce. The Bistek Tagalog is served over white rice.
