À la Nage means “Swimming” and refers to the way to serve fish surrounded by the poaching liquid, or a Fumet, containing vegetables in decorative shapes. This is different than a Court Bouillon, which refers to a poaching stock used to cook the fish. The vegetables used in a Court Bouillon are discarded as all their flavor was extracted during the cooking process. For À la Nage, additional vegetables are separately blanched and served along with the fish.
The fish will be served with squid, while the vegetales will include baby fennel, asparagus tips, and tomatoes. The also will provide a Lobster Fumet, or broth, for the Nage.
