Meal Description

A Beggar’s Purse…what is that?  Okay, so it is essentially a crêpe that has been tied together so the contents form a “pouch.”  Cleary, this dish can simply be eaten as a traditional crêpe without the formality of tying it together with a chive….but, the name piqued your interest, didn’t it?  

The Beggar’s Purse was the creation of  Chef François Clerc, the Two-Star Michelin Chef  at La Vieille Fontaine in Paris in the 1970s and 80s. The original version included caviar and creme fraiche tied with a chive.  The dish has had many different iterations with a variety of ingredients over the last 30 years, including both savory and sweet.    

Now, our Beggar’s Purse combination may seem familiar and that is because this is essentially a pot pie with a crêpe replacing the pie crust.  In terms of seasonal ingredients, we are in late Winter transitioning to Spring, so seasonal items included Morel Mushrooms, Kabocha Squash, Green Garlic, and Fava Beans.  The dish can be presented either as a the “purse,” or simply as a crepe.

And, we know all too well how much everyone loves crêpes!!! CookDC’s Chairman tried to take her family to a local crêperie for brunch last weekend and there was a line out the door….Hello you is only egg, flour and milk…

On a side note, the Chairman really gets upset when the menu says “Buckwheat”  crêpes, because that is not a crêpes at all - it is a Galette! Once the Chairman ordered a Galette and was served a pizza….what the….?!!! Names have a purpose, so make an effort….whether you are affecting greater consumptions of breakfast foods, whose effect leads to more crêpes eaten; and since a galettes is typically larger than a crêpe, then it should be eaten first;  and be sure to be polite when accepting the crêpes from the server, except if you ordered a Galette!!!
