touch to this traditional all-beef Chicago Hotdog. The dogs will be served on a Poppy Seed Bun
with all the traditional fixings, such as Mustard, Chopped Onion, Pickles, Tomato Slices, Peppers and Celery Salt (note: Ketchup on a Red Hot is considered a misdemeanor in Chicago). This
hot dog, which is a depression era dish, is expected to appear as though it has been “dragged through
the garden.” Traditionally, the hot dog
is boiled or steamed, however we believe grilling adds flavor. A grilled Red Hot becomes a “Char-Dog” in
Chicago parlance, but you are free to cook them any way you want.
These hot dogs are made
from Kobe beef, which is Japanese Wagyu renowned for its superior marbling and flavor. For Wagyu to be called Kobe, the cattle must be
raised in the Kobe Region of Japan. The
Red Hots will be served with Oven Fries cooked in duck fat…..because everything
tastes better with a little duck fat. The
meal includes an optional Grilled Romaine Salad with a Green Goddess Dressing,
which is made from sour cream, mayo, tarragon, and parsley.
