This is the quintessential Julia Child dish, who popularized gourmet French cooking with her seminal cookbook Mastering the Art of French Cooking. This is a traditional French red wine braise (which is cooking tough cuts of meat for a long time covered with liquid….stock, wine, water, etc.). We have altered the recipe to allow you to finish the cooking in 30 min. We will Sous Vide the Short Rib for 12 hours making this flavorful cut fork tender. The Bourguignon will be served with Pomme Purée and buttered peas.
