Phở (pronounced "fuh"), which is Vietnamese Beef Noodle Soup, has become increasingly popular throughout the world over the last several several decades due to the migration of the Vietnamese escaping the Vietnam War as well as the consequences of the fall of Saigon in 1974. This iconic dish’s origin goes back well over a century to when the French in 1887 colonized what was known back then as Indochina. The word Phở is thought to have come from the French word "Feu," with the dish being an adaptation of the French Beef Soup "Pot au Feu." However, some believe that Phở actually comes from the Cantonese word “fun,” which is a flat rice noodle. Whatever its precise origin, this is Asian comfort food at its finest.
Vietnamese food is all about balance, not just with flavor but also texture. Phở includes pliable noodles, slow cooked beef, crunchy fresh sprouts, a deep rich beef broth, some sourness from splashes of lime, and heat from hot peppers. A mosaic of contrasts.
We will be providing Southern-Style Phở, which is highly seasoned with an array of ingredients, contrasting the Northern-Style that is minimally garnished to emphasize the beef. The traditional noodle for this dish are Bánh Phở, which is a flat rice noodle. We will braise the oxtails and use the braising liquid as the base for the soup. The preparation is simple as the broth is heated, poured over the Bánh Phở and garnished with the fresh vegetables.
A Vegetarian Phở substituting vegetable broth and Tofu also is available. We also will be offering an Asian Salad with Daikon, Green Mango, Cilantro and Green & Red Shiso Leaves and a Sesame Ginger Vinaigrette.
